Hi Paul, For all my boning knives I tend to sharpen between 9°-11°, what matters more for this knife is the sharpening stone, I've had success with 1000 followed by 6000

It is an engineered wood handle, often referred to as 'Pakkawood'. This is a wood / epoxy resin composite that is more durable than plain wood.

Steel is good only fault bit light for any hard work

Q: Which honing steel should I use for this knife? Any recommendations

This knife is made of very hard steel (VG10), so you want to use a fine cut butchers steel that is even harder. I use an F Dick Dickoron sapphire cut.
