another great product from Nordic Ware
Very nice loaf pan, first test was a lemon pound cake and after brushing some homemade cake release into all the nooks and crannies, the pound cake came right out. no sticking, so not difficult to clean - but it really does need to be treated with something, even Baker's Secret might be enough. The result is a very pretty loaf or cake.

Despite my concern that the finish is a little uneven on one end of the pan, I have been reassured, after inquiring via email to Nordic Ware. A prompt, detailed reply explained why I need not worry, and the pan did produce a beautiful loaf cake. I will take good care of it to insure I enjoy it for a long time.

Makes plain ol' pound cake fancy
I love this beautiful little loaf pan! I wanted to really test it out before reviewing the Nordic Ware fluted loaf pan. I saw the pan on a recipe video and was so enamored with the finished loaf I had to have it. Over Christmas I used the pan 8 times! Almond Pound cake looked beautiful for covering the bottom of the pan with sliced almonds after spraying- before the batter was poured in! And Eggnog cakes that I usually bake in a Nordic Ware "Church" Bundt pan.One "cake" recipe makes 2 "loaves" - so that was pretty cool to give fancy looking loaves of basic Pound cake to a couple of neighbors 👍 I really thinned the glazes so it didn't hide the beautiful fluting.Years and years ago my old Auntie taught me to put the heavy Nordic Ware pans in the fridge before greasing and flouring, while I'm mixing the batter and preheating the oven. I've always done it with my "Church" pan and my detailed "Flower" pan - which are *one cake & done*. But I only refrigerated the fluted loaf pan the first time (after that I just wiped it out w/ paper towels and sprayed it well after it cooled - I was speed baking!) I used the "Baker's Joy" spray into the cold pan and made sure all the crevices were covered. The refrigerated "cold pan" works well for summer baking because the baking spray stays put all around the sides instead of puddling in the bottom. I had no "sticking" issues with any of the loaves. The "spray generously and use a brush to get it in the creases" is excellent advice.If I ever find hazelnuts in a grocery store, I'll try the "Hazelnut Espresso Cake Loaf" recipe included on the back of the Nordic Ware packaging. Buy the pan. You'll love the results!I must admit I was lucky the pan was is good condition after being shipped in a big envelope. No padding, no box... coulda been a smashed disaster but I totally lucked out.

I am in LOVE with this pan. It was a little smaller than I thought it would be, which I was thrilled about. It's only my husband and I, so we don't need a huge cake. I'm going to try bread next and see how that turns out.I don't use any "sprays" in my good pans. I use Alton Brown's Kitchen Goop (I believe it's called).Equal parts: liquid oil, solid shortening and flour. Keeps in the frig for 2 weeks (I sometimes have it longer than that and it's been fine. Maybe just needs a stir.)Recently I started keeping it in the freezer. It's easy to get a spoonful out and it comes to usable consistency very quickly. I use a pasty brush and spread it into my bundt pans and everything comes out perfectly. I've never had anything stick, even sticky Apple Cake, and I have some pretty intricate pans.

I love this pan so much that I bought 2
This is such a pretty pan. It holds the same amount of batter as a regular 9x5 loaf pan. Essentially, any recipe with at least 3 cups of flour. I added an extra egg (4) to my standard zucchini bread recipe to get a full "rise".If you can find a bundt recipe sized for a 12 cup pan, that will work for 2 Classic Fluted loaf pans too.I also have made a lemon bundt with lemon cream cheese frosting in these pans. Delicious, but the frosting was too thick and too sticky to look pretty. A fine dusting of powdered sugar, or a very thin glaze, or nothing allows the pattern of the pan to take center stage.I use baking spray with flour, allow to cool 5 minutes before unmolding, and cakes come out perfect; and pans clean up easily.
