Anche se viene venduto come coltello da trito di erbette l'ho comprato per pulire e sfilettare pesci grossi (dai 20 kg in su) visto il profilo abbastanza simile ad un ko-deba ; dopo qualche mese di utilizzo e diversi tonni e ricciole posso dire che fa il suo dovere che è una meraviglia forse meglio di un tradizionale coltello giapponese in quanto non si ossida anche a contatto con il sangue (specie di tonno) , ha un filo ben fatto che resta un rasoio senza bisogno di manutenzione continua e, cosa non da poco, ha un manico che resiste allo sporco di interiora , squame e schifezze varie. Se lo si compra per tritare il prezzemolo è uno spreco ,oltreché scomodo ma se siete matti quanto me e lo usate per fare a pezzi un tonno da 50 kg vi stupirà!

Die Lieferung erfolgte sehr schnell, wie immer. Für die Verpackung kann ich dem Hersteller ebenfalls 5 Sterne geben, hier sollten sich deutsche Hersteller mal eine Scheibe abschneiden. Das Messer selbst wurde sehr scharf mit einem Klingenschutz geliefert, was für die Aufbewahrung sehr praktisch ist. Die Arbeit mit dem Messer ist einfach phantastisch, es liegt gut in der Hand und ist sehr gut ausbalanciert. Es ist vielseitig einsetzbar, nicht nur als Kräutermesser. Deshalb absolute Kaufempfehlung!!!

I am pretty attached to my chef knife for chopping dicing and mincing foods in my kitchen, but I am always open to trying new ways to keep food prep less fatiguing and fun. When I had researched using a rocker knife instead of a chef knife for thee tasks, I was intrigued enough to give it a try. What I found out upon actually using it was that it is indeed ideal for these jobs with a few advantages over my chef knife. Unlike a traditional chef knife, this knife’s blade has a pronounced curve that is designed for rocking back and forth over the cutting board. That means you can mince, dice and chop without having to lift your blade off it’s cutting surface in the way that you would while using a chef’s knife. The blade has the perfect amount of length (7”) weight and sharpness to it, and it gave me amazing control and precision cuts. I could prep a higher volume of food efficiently, in less time and with less fatigue. The rocker knife blade is also much wider than a traditional chef knife which made transferring food from the prep area to the pot, pan or bowl quicker and easier. The knife is designed with a full tang, triple riveted handle, and a blade that is hand finished in the Honbazuke 3 step method. This means that the blade is first coarsely ground using a vertically rotating sharpening stone, followed by a fine honing using a horizontally rotating sharpening stone. The edge is then polished using a leather stropping block for scalpel-like sharpness. As with every knife in their Shogun series, the exceptional craftsmanship and attention to detail makes for a knife that anyone would be proud to own and use in their kitchen.
