Amazing replacement for flour!
I used this to make our Mac & cheese for thanksgiving, my “cream of celery” for a casserole (a from scratch replacement for the canned junk), and a gumbo a few days after thanksgiving with leftover turkey. Um, im immensely shocked with how successful everything came out, especially the roux for the gumbo. I make my roux in the oven and you couldn’t tell the difference. I was shocked!

Makes great gluten-free bread!
I recently started baking gluten-free, egg-free bread in a new breadmaker. This millet flour is a perfect addition to my blend of flours. The bread is absolutely delicious.

Very bitter
Taste is bitter and weird. It give metallic aftertaste. I don’t think it’s healthy.
