New to 1 sided blades
Love this knife so far, obviously aesthetically it's beautiful but the weight distribution is amazing. I'm a chef and my GF is a novice cook but it's both of our favorite knife in the house (so far)... it does get a little more scratched up while cleaning than I would like but I'm sure I'm just not being delicate enough or using the wrong sort of sponge. All in all great knife, not for beginners though as that single edge is going to be very difficult to keep razor sharp

Cuts potatoes like butter
I was on the hunt for a new chef's knife and decided on the glestain gytou style based upon an ATK review and reading other random knife blogs, which boast the sharpness of the blade and functionality of the grantons. I can attest to both. The knife is razor sharp and effortlessly slices vegetables (i.e. potatoes, carrots, etc). Additionally, the grantors promote slices (even medium hard cheeses) from sticking to the blade. I prefer the lighter weight of this hybrid style knife as compared to heavier European branded chef knife. Some reviews that I had read discuss awkward balance of this knife, I don't agree, but much of the knife feel is personal preference. And, I am well-pleased with my purchase

Great knife
I've had the 9 incher for several years and I love it. I just wanted to get the 8 incher because I thought a smaller knife would be handy. Well as soon as I got it, my grown son just had to have it so I give it to him as a Xmas present. Great knife. Wonderful for chopping veggies for gravies, soups or???

Oh my God! This knife is one of probably 20 great chef knives I own.By far one of my best. Makes short work of potatoes without sticking.Buy this knife, and elevate your culinary outlook.

Great knife. Needs some skill to sharpen but awesome none the less. Great for the low price and for those new to the cut and care of gyuto knives. Do not use a steel on this knife!!!

Small handle and two months late. There is no doubt that the blade is amazing. As sharp as you can imagine but Two Months Late?
There Is no doubt that the blade on this knife is impeccable. Perfectly ground and polished to a mirror like level of quality. However it’s made for a small hand and as a man with a large hand it was disappointed. But the greater disappointment was waiting two months past the advertised delivery date. I get that it’s handmade, but it was Misadvertised.
