Q: Hi. Which Mercer knife guard would fit this knife?

I guess any knife guard with the right length will do. I made a guard out of the packaging it came in.

Q: Is it normal for this Mercer X50CrMoV15 to rust and develop small pits after forgetting to wash it for 10-15 minutes after carving salty chicken?

That is not my experience. I am not fussy about cleaning my knives quickly and occasionally they sit out all night. But my Mercer has not shown any signs of rust or pitting. I suggest you contact your retailer and try to get a replacement.
