Practical, interesting, beautiful book for the geek foodie
Opted for the hardback cover as a gift for my partner who's a big scientist and loves to cook in his spare time. Super practical, interesting, lovely art work and something to show off to friends, he loved it! For a pro chef it might be simplified based on other reviews but as a geek foodie it was the perfect present! Would buy again for other food amateurs in science!

Good idea, looking forward to a second edition
Bear in mind that this is the same book as "Spice" from the same author, so don't bother buying both.I have been looking for a book like this for years, so I am happy someone finally put this together. It not only covers a wide array of spices, but also the chemistry of them and how to knowingly combine them. I especially liked the historical, cultural and geographical discussion of each spice. As an extra bonus, regional recipes for each spice is included.On the negative side:- it really should include herbs as well as spices (though some herbs are included). And dill seeds are included, but dill weed is even more popular- the heavy focus on India but total exclusion of Eastern Europe on p71 is unforgiveable- there are many factual inaccuracies (slaves didn't build the Egyptian pyramids, just one example). I didn't feel like cataloging them all, but everytime I run into one it just makes me wonder how much of the rest is also inaccurate- I like the periodic table of spices, but it needs a page number to the spice profile. Actually, I would like such a table as a poster for my kitchen, and if it included additional information (country / region of origin, ideal combinations, etc)Overall I really like this book and it's a welcome innovative addition to the culinary sciences, and I would welcome a second edition.

Fantastic book
What a fantastic book! I bought this book as a Christmas present for my son and could not resist to peep before giving to him. It is such an interesting book beyond my expectation. The spices are organized according to types and the countries, so easy to search and so enjoyable to read as well. I definitely need to buy one for myself.

What a great book.
Love this book, it's so well presented and full of useful information.It's not one to read, but definitely belongs in anyones collection who enjoys cooking with spices. Lots of tips, tricks and ideas.

Best book ever
I wanted this book for FOREVER and finally got my hands on it on Black Friday. Wow, it exceeded my expectations! It goes into so much detail and is so informative and written so simply! The photos are amazing and are printed on high quality paper with good quality ink and my favourite part is that it’s a hardback!!! The cover is gorgeous but it does scratch quite easily. I just love this book so much, it’s elevated my cooking so much now that I understand which spices go with which and how to get the best flavours out of them. It even has recipes from all over the world in it too. It’s a must read for anyone who wants to improve their cooking and flavourings, for sure!

Not a recipe book
This book is amazing to help you understand the science of spices, how they can work together or against each other. It’s very helpful for people looking to better understand how to season their dishes, and how to compliment flavours. There are a few recipes and quite a few spice rubs from different regions ( Caribbean, Africa, Middle East etc). If you are looking for a recipe book, don’t buy this. If you are looking for an encyclopedia, a tool to further your cooking, I 100% recommend this book! My brother and oldest son are waiting to borrow it. I’m just not ready to part with it yet!
