Makes risotto super easy to make and it's noticeably better than Arborio rice
At $7/lb (with shipping), it's certainly a bit more than picking rice up at the grocery store. But if you really love a perfect risotto this is what you need. I used to always make it with Arborio rice because it was readily available at the grocery store, which does a fine job. But the Carnaroli barely needs to be stirred to get it to release its starches to make a creamy sauce and the texture is a little better. If you like risotto you've probably seen the Youtube videos where they sit over the pan for half an hour constantly stirring but with this rice that just isn't needed. I use a whisk to stir and I think that makes the grains release their starch more easily than a spoon.Be sure to buy real ungrated Parmesan Reggiano (I use a food processor to chop it into small grains vs an arm workout with a grater) and careful with adding salt, the broth/stock and the cheese have a lot already so you won't need much salt if any.

Delicious and very good quality
I used Riserva San Massimo rice to make saffron risotto. It was recommended from a youtube video by Michelin star chef Carlo Cracco. I decided to give it a try. I found the rice to be super high quality with great flavor and it came out perfectly. I highly recommend and it. It will be my goto rice for risotto in the future.

I had high hopes, but I got bamboozled
the one star is because it's just arborio rice in a pretty package FOR SIXTEEN DOLLARS that doesn't perform any better than the stuff I get in the grocery store for about a buck.So in in a few words; it is a rip off.

The best quality!
It retained its texture after cooking. Really like this brand of rice. Couple of things I did to help which I read is not to add salt during the cooking and only at the end. The same for any wine... So hold the Parmesan for the end since it has salt in it. You won't be disappointed with this brand.

Exceptional Carnaroli
I have tried a number of different Carnaroli rice for risotto. They all tasted pretty much the same, except this one. I like it better, highly recommended. Worth the money. Watch the beautiful video where it is grown.

The flavor of the rice was lacking disappointed in the product overall. Bought the rice to make risotto and it didn't turn out well at all ;(

Makes delicious risotto
I always thought Arborio rice was recommended for making risotto, but learned in a cooking class in Tuscany that Carnaroli is the gold standard for the best risotto.
