Red Wine Black Payoya with D.O. Sierra de Málaga made by Finca La Melonera. The winery is located in the Serranía de Ronda, a region in the heart of the province of Málaga with a winemaking tradition that goes back 3000 years, until the Phoenicians. The objective of Finca La Melonera is to recover this wine tradition and with it the varieties of the region that are on the verge of extinction. -------------------------------------------------------------------------Black Payoya red wine is made with grapes of the Syrah variety (60%), of the native variety Tintilla de rota (20%) and Cabernet Sauvignon (20%). The grapes come from own vineyards located between 600 and 900 meters above sea level. For the cultivation of the vineyard ecological methods are used, pesticides and herbicides are omitted and Arab tiles are used to achieve a retention of water that does not impact on the environment.-------------------------------------------------------------------------The harvest is done manually, the grapes are transported to the winery in small boxes of 7kg. In terms of processing, Payoya Negra makes a long maceration and fermentation at 25ºC and a 12-month aging in 225-liter barrels of Allier French oak.
