I’m in my 40s and have recently had to switch to a gluten free diet due to an autoimmune disorder. I was in the dumps because I could not find a decent pancake mix. Let me just say that these are not only the best gluten free pancakes I have ever had but they are also even better than other regular, non gluten free pancakes I have had. My husband said the same. This is the only way we make pancakes. They are GF and delicious. I would put them against any pancake made with wheat flour. An addition we use is to reduce the liquid a bit and add a little maple syrup to the mix when making them. Yummy!
