Short and sweet..
After much research, I decided to pull the trigger on a couple of the Zelite knives...the VG10 10" Chef's Knife and this one, the 6" Gokujo boning knife in AUS10 steel. For those that don't understand the differences between different types of steel and how they relate to taking an edge, holding an edge and how susceptible to stain resistance, bending and breaking they are, I REALLY suggest doing some research before you spend your hard earned money. Short and sweet...the VG10 and AUS10 cores that the Zelite Alpha-Royal Japanese knives are based on are the way to go. These 2 steels are, for all practical purposes, the go to carbon steels for hardness and edge retention in knife making as far as Japanese steels go. The AUS8 steel isn't in the same league. The packaging this knife came in was impressive. There's a magnetic closure on the box and the knife itself is nestled into a form cut bed of high density, red foam. The tip is also protected by a plastic cover. The blade is exquisite...and wickedly sharp out of the box. The handle is very comfortable, the balance is very neutral and the weight is solid but not at all over bearing or uncomfortable. It's obviously a very well thought out and executed design. I did have a couple of questions that I posed to Zelite customer service via email. They were very prompt, very thorough and very professional in their communication. They left me very impressed with their level of customer care and their commitment to their product. The maiden cuts were performed on fruit....tree fresh oranges to be specific. After effortlessly quartering, I was able to shave wafer thin, see through slices from the meat of the fruit. I also used the tip to separate the meat from the peel with both precision and ease. The knife is very nimble and I'm looking forward to putting it though its paces when I use it for its main purpose....which will be trimming and prepping cuts of chicken, pork and beef for real pit BBQ. For those in the market for a very high quality and versatile boning knife, I can recommend the Zelite Infinity Gokujo with no hesitation. I'll definitely be adding to my collection.

WOW!!!~Now this is a knife you will want.
I am 80-years old and have had a love affair with quality knives my entire life. Over the years I have purchased thousands of dollars worth of professional chef's knives from many of the major manufactures from France, Germany and Japan. I have the old carbon steel knives as well as the newer stainless steel knives, and I have just about every configuration of knife made for the professional chef. What all of this is leading up to is that I recently purchased a Zelite Infinity Boning Filet Knife for my wife. She has one particular knife that uses for almost all cutting jobs, so I am constantly having to sharpen it for her. While this knife is of good quality steel, made in Japan and purchased in New York from a large restaurant supply outlet, it does not hold as sharp of an edge as long as my wife requires; ergo I sharpen it often. The Zelite knife is just the opposite as it holds it edge for many uses. It is in my opinion the finest knife I have even seen or used in my lifetime of spending far too much money on far too many knives unnecessarily. However, even though I am 80-years old I a going to be sure to acquire more of these fine knives; either purchase them myself or have family give them to me as gifts for Xmas and birthdays. You have produced an outstanding product with these knives and should be very proud of your achievement as you went up against some tough competition, and in my opinion produced a better knife. I’m known for having excellent judgment in and this is the BEST!
I’m a Product Designer, a master craftsman, an ex-professional modelmaker, and a skilled amateur chef. I know knives, sharpening and knife skills. This knife is a replacement for an irreplaceable knife my Wife LOVED, that some friends lost for us. It was a very small but wide sushi knife I bought for her in Asakusa, Tokyo, and replaced the traditional handle with a cherry wood and brass/epoxy one I sculpted especially for Her hand. Needless to say, replacing it was a challenge. This one is slightly bigger, but miles better! She LOVES it even more! Plus, it doesn’t rust. Keeps an edge like crazy, super-fine angle, gorgeous Damascus steel treatment, an exquisite handle (truly gorgeous! Excellent ergonomics, Fantastic fabrication and finishing) and function like a dream. If you can swing it, buy one. You will be happy too. Makes a great gift, in a nice presentation box (paper board, with good explanation graphics and great foam and flocking interior for your model) that will flatter even the most discerning recipient. I’ll be lusting after more, I cna tell you. If I didn’t have a fabulous collection in my custom made (by me) knife rack already, I’d be running up the debt right now!

Fantastic Knives
I have two Zelite Knives; Chefs Knife & Boning knife. They are fantastic! Well made, comfortable and super sharp. I’m so impressed with the look, the quality and the effectiveness of these knives that I’ve ordered the Bread Knife as well. I think the chances are good I’ll get the paring knife at some point in the future. I can’t compare them to a $400 knife because I don’t have any, but these are by far the nicest knives I’ve used and I’ve had absolutely no issues while using them. They’re inspiring to use and make me want to try new recipes in the kitchen. They’re definitely built to last and they hold an edge incredibly well when taken care of. Worth the money for someone who really wants quality tools and control to amplify their dish.

My husband recently purchased some Alpha Royal Series as we already have the Japanese version of these knives and have used them for about a year (they are still super sharp and a pleasure to use) and my mother got a bit jealous as she was still using her old knives, had been going on about how excellent they were, so I thought I'd buy them as a gift to keep her happy!!. The previous Alpha Royals were superb and I expected that these would be no different....I wasn't disappointed!!. The range of photographs attached show the variety of foods that were prepared using the set. Firstly, the Knives arrived in quality packaging. I was particularly impressed, once opened, with the look of the knives in the box....they look super cool and were in keeping with the quality look of the other Zelite knives I've seen and used. The knives themselves are super sharp and you need to be extra careful when you first use them and remove them from the pouch. I cut my finger despite expecting them to be this sharp from prior experience with the Japanese versions! Since they arrived on a Saturday my mother was cooking a Sunday dinner the following day , so it was a great chance to try them out for herself. She was particularly impressed at how very well balanced and easy to use they are and don't feel overly heavy in the hand. They sliced through whatever food was being prepared with ease and all done their jobs with extreme ease. These are on a par with Zelites previous range as they continue to produce outstanding quality knives whether for the occasional chef or the more hard-core ones. Either way they are a definite plus for any kitchen and I can't recommend them highly enough. Now the big question for me….. "Do I keep these and give mother my Japanese ones"!! I now have 4 Zelite Comfort Pro knives and will be buying more to complete a versatile all round set. My first was the paring knife, I was so impressed with the quality, comfort in the hand and all round feel that I quickly ordered more. They come super sharp (as you would expect) and have proved to hold a good edge and be easy to keep honed. The filleting knife has a lovely shape to the blade with a very sharp point and broad slicing area making it a doddle to score pork, wheedle out bones and slice evenly. The serrated utility knife will cut an overripe tomato without tearing or squashing it, it is great for soft fruits etc. I also have a Kiritsuke chef knife which cuts through just about anything like a laser. These knives are really solid, even the little utility knife has a weightyness to it that makes it feel much bigger than it actually is. The bigger knives are pretty heavy but well balanced in the hand and the grip you get on the handles is really good making you feel completely in control of the blade. I can't rate the durability yet as I have not had the knives long enough to comment. If I remember, I'll come back in a year and update. For me, this feels like a good investment. These are the 'affordable' range in the Zelite collections and are of much higher quality than anything else I have come across in the price range, I'm looking forward to completing my collection and expect to get many years of use from them. I should mention that I had an issue with one of the last knives I ordered. I contacted Zelite direct by email (as they request you to in the info card that comes in the box) and got an immediate response. They sorted my problem out with no fuss and to my full satisfaction. It was far easier than going through the Amazon returns and re-order procedure and they seemed genuinely appreciative that it was bought to their attention.
