Bethlehem: A Celebration of Palestinian Food

A wonderful snapshot into the world of Palestinian cooking. Some truly wonderful recipes. Healthy and diverse in nature. This is one of the few books that I like the majority of the recipes.

I like the layout of this book, the lovely photographs, the way the recipes are divided into the seasons of the year, the introductions we have to some of the Bethlehem characters who provide some of the ingredients for these traditional much loved dishes. The recipes are straightforward to follow and if you didn't know it before, now you know that Palestinians have their own cuisine, related to other Arab and Middle Eastern (Turkish and Greek) food, but with a style all of its own. The way it's cooked in Bethlehem might well be different from how it is prepared in Nablus.
