No sticking with ghee.
I use 2 of these placed in baking sheets. Rub them liberally with ghee before I add my cloud bread dough to them. Which is: 7 eggs separated. The yolks go into a food processor with1 cup of cottage cheese, for a little extra protein, I add 2 tbsp of beef gelatin while it's mixing. Add that to the egg whites beaten with some cream of tartar. (My oven has its own agenda so temperature are a guess.) Bake around 3:25 degrees until the tops are brown -- less than 25 minutes. Turn them over, bake another 10 minutes and turn the oven off. That to get the middles good and dry. Find your own way. Some people use cream cheese instead of cottage cheese.

Great for Jumbo Muffins!
I bake alot and was making a bunch of jumbo muffins, but couldnt find a metal cupcake/muffin pan that could fit the liners. I bought this one and its a game changer! Works great, you can set it right on the rack since it has the holes on the bottom so it cooks evenly. Great molds!!

Sourdough Einkorn buns are super tasty
In my friends and family circle we have a number of folks who are gluten intolerant but love a good hamburger, bun included. These same individuals are all able to easily digest the sourdough Einkorn breads I bake, so I thought I'd try making hamburger buns. Yes, I know, these buns are not adorned with an egg white coating or any sugar in the batter, but WOW are they tasty! As for the Hamburger Bun pan, I wipe a thin coating of olive oil on the sides and bottom, insert parchment paper disc in the bottom, rolled the dough into balls, let them rise and baked for 18 minutes. I don't think I'll ever buy hamburger buns again, these are so good it is tempting to cut them in half, toast them, slather some butter on them and eat them all before I even get to the store to buy hamburger.

Great for making Carnivore hamburger buns
These are pretty good pans, although you still need to grease them prior to filling. My husband and I follow an animal-based way of eating, and when I made PSMF (see Indigo Nili’s YouTube recipes) roll batter, it proved even more useful to cut out parchment circles to line the bottom. Otherwise you must bake them on a sheet pan so the batter doesn’t ooze through the silicone pan.
