Creates an edge that makes meal prep a snap
I bought one of these several years ago and brought it with me on a trip to a friend's ocean front house on vacation because I had been frustrated trying to help her with meal prep using her poorly sharpened knives. When she experienced the results of sharpening knives to the correct degree angle, she expressed her jealousy, so I gave her my sharpener and ordered a new one. The new sharpener appears to be just as effective as the old model, although not as good looking. I hope it's as durable/reliable. I have had an excellent experience with the Chef’s Choice 15XV Professional Electric Knife Sharpener. My first unit lasted over six years without any sign of wear or unreliability. I maintained it by tapping out the diamond dust after each use. It will probably last many more years. That's why I didn't hesitate to give it as a gift and buy a new unit. I only hope they still make them as well as the one I gave my friend. It was built like a tank and worked like a charm. If you like to cook, this knife sharpener will keep your knives sharp and make meal prep a pleasure. I would definitely buy this again.

Most likely sharper than when you originally bought them
Many reviews say that the 15XV is complex so read the directions. It is not, it just has three stages unlike most with two but yes - read the directions. First page of the directions has a warning: KNIVES PROPERLY SHARPENED ON YOUR XV15 WILL BE SHARPER THAN YOU EXPECT. TO AVOID INJURY... HEED THIS WARNING - you can ask my finger which now has a heartbeat after sticking it with the tip of my Wusthof chefs knife. This sharpener will indeed sharpen your knives sharper than ever before. EASE OF USE: There are three phases stage one - generating a burr. In this phase you alter from left to right until a burr ALONG THE ENTIRE EDGE is generated. It will only be on one side of the blade depending on which side you started on. If your knife had a 30 degree bevel then it will take many (up to 20+) pulls before you get the burr. This indicates you have transitioned to the correct angle. stage two - hone - again you alternate between left and right in the second set of slots. This time you only need to do 2 or 3 pairs of passes. (note that depending on what you are using you knife for, the directions might have you skip this stage) stage three - polish - same as stage two, 2 to 3 pairs of passes and you have a beautiful tri-bevel 15 degree final. Note that you need to follow slightly different process depending on if you are sharpening a serated blade (read the directions :-) ) RESULT: I find that eating with an extreamly sharp knife can actually make the experience of cooking / eating much better. From cutting a peice of filet mignon a perfect thickness to enjoy, or when preparing by improving your knife skills. Just remember, your finger can have a heartbeat too if you are not careful. I would HIGHLY recommend this sharpener - even at this pricepoint. This replaced my old Chefs Choice which met an unfortunate end, but was not even close to how well this works. NIT PICK - Yes, as some have pointed out, the sides of your blade might get micro scratches from pulling through the machine. My knifes do have additional scratches on the sides of the spine. If you have highly polished spines, you may want to put a piece of carpenters tape on the sides first before pulling through if you believe it is an issue. I personnally do not care, as my blades are not perfectly polished anyhow.

Let it be known that this works WAY better than those cheap sharpeners that you keep in a kitchen drawer. My knives are even SHARPER than they were when I first purchased them. I believe the reason for this (as it states in their manual) is they sharpen to a 15° angle versus what I think is a standard 20° for western knives? Even though it’s a hefty machine, it does require some time and legwork—took me roughly 10 minutes per knife to get it fully sharpened. Regardless, this thing is going to keep my knives sharp for decades to come and I couldn’t be happier with this purchase.

Makes knives unmatchably sharp, but make sure you get a good one
I had to buy two of these: The first one came with a terrible shimmy when grinding the blade in the righthand slots of each grit wheel. It was present in all grit wheels, possibly due to them sharing the same loose-play drive shaft. The overall build quality is also disappointing when compared to my Chef's Choice 120 from ... however long ago. It doesn't have that same rock-solid feel of the older unit, which had been quite impressive and reassuring. However, it isn't junk, either. It's still a very good kitchen tool. Furthermore, it delivers VERY SHARP BLADES-- much sharper than the old model 120. A small amount of sharpening will produce a chef's knife that nearly slices a tomato by its weight alone. A mushy tomato? Doesn't even matter. Draw the blade gently over the skin and it parts like the Red Sea for the Lord in Genesis. So I take a star away for the minor decline in build quality including the first dud I received. But if you forgive that, you will have kitchen knives so sharp they frighten your food.

I'm always on the lookout for a kitchen tool that will make sharpening easy for my wife and I. I decided to try this Chef'sChoice XV15 after reading several reviews. I tried it out on ten kitchen knives and two sizeable pocket knives, one of them Buck brand steel. In 20 minutes I had learned how to use the 3-stage system and sharpened all the knives. They pass my paper cutting test with an average slicing. To get better slivering of paper, I would have to go back to my old water stones. Good enough for fast sharpening of our kitchen knives, however. This machine is larger than I thought it would be and heavy. It is powered through a corded plug. It is quiet even while grinding the blades. It will do fine in our kitchen for as long as it lasts.

Unfortunately I didnt have the chance to try it because it is 120 v not 220 volts. Im returing it
