The aroma when the jar is opened is striking—fresh citrus peel with an almost floral edge, quickly chased by the sharpness of green chili. It has a coarse, slightly chunky texture with bits of yuzu peel that make it feel rustic and authentic. The flavor is a unique balance of salty, spicy, and citrusy. It is definitely salty, so I’ve learned to use just a dab at first and then adjust the dish afterward. That concentrated seasoning makes it perfect for cutting through rich foods—adding depth to grilled meats, roasted vegetables, and even creamy pasta sauces. I’ve had great results mixing it into a dipping sauce for dumplings, whisking it into salad dressings, and stirring a touch into miso soup or ramen broth. This stuff is delicious. Spicy, citrus and salty. Adds a fresh pop in so many dishes. I add it to marinades, dressings, really anything that could use a punch of flavor. My family of four goes through jar about every other month. If you like yuzu and a little heat you need this in your life!

Still not sure exactly what this is, but it's great mixed into soy sauce, maybe with a little rice wine vinegar and honey, a tiny bit of sesame oil, etc., as a dumpling dipping sauce. It's salty, but intriguing. You can use your phone to translate the entirely in Japanese text on the box -- see photo! It's also very small, but you aren't going to use more than a tiny bit at a time, I think.

I love this paste and it’s become incredibly hard to find outside of Japan at our local Asian markets. I’m thrilled I was able to find it here and such gold quality
