It has been a while but as I recall it came in a box with some type of coolant to keep it cool. Prompt delivery and in good shape on arrival. Very good as well. We have kept some in the freezer in an airless freezer bag and some in tupperware in our refrigerator. Easier to grate if not frozen.

How is this authentic italian parmigiano reggiano when it doesn't have a dop (denominazione di origine protetta) seal?

I purchased it for Xmas of 2021 and it was delizioso! This past Xmas, I bought two pounds of Locatelli Pecorino Romano and it was also terrific!

Will this survive when shipping takes so long?

The short answer is YES. Parmigiano is aged for 18-36 months at 65 degrees, and because it is a dry cheese does not ever need refrigeration until opened. Most Italians would never put it in the fridge, because it will absorb other odors and the humidity will change. In the grocery stores in Italy, there are mountains of Parmagiano loosely wrapped in Saran wrap on display at room temperature and honestly, it tastes so much better if it never meets the fridge. I shipped to my sister in New Mexico where it’s 105 degrees and the cheese arrived in perfect condition. All that said, the cheese ships in an airtight wrap, but after opening, the fridge will help it last longer. Italians normally only buy as much cheese as they will use for the week so it never needs refrigeration. If you store it in the fridge, wrap in wax paper, then seal in a ziplock and it will last for a year probably. PS Europeans don’t refrigerate butter either, and neither do I. YUMMMM
