Good Thickness, Size is a Bit Small, Needs Rivets, No Proof if it is Food Grade (18/8) Steel
Overall a good kadhai. I needed an 304 ss type stainless steel kadhai 1.5 litre with 3 mm uniform thickness. This has only 1.25 litre capacity, still, I brought it because I found no other option which comes close to this kadhai in amazon or flipkart.Pros---It is round bottomed kadhai, so it is a real kadhai as kadhai truly is. It is not one of those flat-bottomed kadhai which are flooding the market. ---It is thick and has uniform thickness all over its body. So it is better for cooking than those which are not as thick. Theoretically, food will not get burnt as fast as in thinner Kadhai. Since it is still made of steel, therefore, it needs monitoring and stirring while cooking. ---Again, highlighting the first point: it is thick from bottom to the top. It is actually great because many Stainless Steel Kadhai do have thick bottom but taper on the sides--their sides are thinner. As soon as the food touches the sides, it gets easily burnt during cooking. ---For those who need a thick and only stainless steel Kadhai, and not those which have Aluminium embedded in between two steel sheets, this is a preferable Kadhai. ---It does not have sharp edges at the handles along the welding. ---It looks cute and shiny. ---Since it is small in size (a con for us), that makes it comparatively easier to wash and clean, even if it is heavier for its size. I don't know if it is dishwasher friendly or not.Cons---It has handles of steel welded to it. They should instead use rivets which offer more strength. We have quite a few cookware of well-known companies (Hawkins, Alda) where they have used rivets and those are still very stable and strong. If Param Upyog company does not have such facility, then they must acquire it to be able to use rivets in their cookware. ---Its size is a bit smaller. You see, if you are not careful, stirring might spill out the food. 1.5 litre capacity would have been better. It might still be good for other people, but it is not ideal size for our use. ---It is round bottom kadhai, but due to its small size, it does not fit over the big burner of gas stove. It actually sits directly in touch with the big burner. It is alright on the small burner but sits quite close over it. ---Of course, the Kadhai does not come with a lid. A heat-tolerating glass lid with steam vent would be very useful. ---No paper, no brochure or leaflet from Param Upyog company is sent along with this Kadhai. We have no way of knowing if the steel used is indeed 304 or 18/8 quality steel (food grade) or some lower quality steel. The stickers on the inner side and outer side do not indicate the steel quality type. It is not good enough to mention it on the amazon. Some leaflet or brochure must vouch for it. The company should take note of this. If they do use 18/8 steel, then they should flaunt it with pride. That is after all, a great selling point and many times, a decider for the customer. For the time being, I am only hoping that it is 18/8 food grade stainless steel. ---Of course, it does not seem induction-friendly. That is alright for us because we use gas for cooking. Anyway, induction cooking might require a flat-bottomed Kadhai with the outer bottom made of 430 type stainless steel. For a normal, thick, pure stainless steel type Kadhai, this one appears quite a good. Actually, this is a good point for those who only use gas stoves and bad point (con) for those who use induction cookers too. I have no idea about the type of steel used, so can't say if it is not induction-friendly. But, in the induction-friendly cookware, the bottom is often flat on the outside to facilitate uniform cooking. Its bottom is not round on the inside as well as on the outside. ---Since it is thick steel, so it is heavy for its size. How it actually fares while cooking, I'll let you know after we use it. We used it once and it did not serve our purpose well due to its small size. We need at least 1.5 litre size of kadhai. The food kept spilling out while stirring. Good thing is that it did not get hot spots on it, the kadhai did not change in color after cooking, and since we kept stirring occasionally, the food did not get burnt. By the way, we did use low to medium flame on gas stove to cook food in this kadhai. We did not use high flame as this small, round-bottomed kadhai was in direct contact with the big burner of the gas stove. It is not non-stick kadhai, so oil/ghee is needed to cook vegetables. I still do not know if it is ss304 steel or ss200 series steel. This point must be clarified by the manufacturer and they also must supply a pamphlet along with the product mentioning this. One more point--we should use it after tempering the steel cookware with oil. Add 1 tablespoon (or less since it is small in size) ghee or mustard oil or sesame (til) oil on it and spread it all over on the inside. Then, put the kadhai on medium flame for 2 minutes. Switch off the stove. Let it cool down then. So, if it is an ss304 grade stainless steel Kadhai, then it is a good kadhai. If they clarify this, then I might buy the size 2.5 liter. I cannot return the current one because I have already used it. Hope this helps.
