I have a GOOD collection of books containing fermented food recipes. This book, in my opinion, is the best I have ever read on the subject. It's concise and has all the fluff stripped out, and it is right to the point in an easy-to-read format and yet contains all the information that you need to accomplish the recipe as well as how to store it. It contains some recipes that I have been looking for but not one of the other books, courses or websites I have looked at just have not contained. This book is a keeper!

Best collection of recipes!
This book had my mouth watering the whole read!The collection and thoroughness of recipe variety makes this a one stop shop for all fermented saucy needs.The ingredients are not so obscure that you'd forget this book on your shelf and you'll find many that you can make right out of your pantry right away!So glad I went with this book and will be using it as a reference for years to come I'm sure!

Suggested measurements are not accurate
Overall, I do like the recipes. The measurements of ingredients are badly off. The siracha recipe made more than twice what it said and I still had to throw out some of the peppers and half the salt water as it would not fit in the 1 qt. fermentation jar. It was supposed to make 16oz. Be ready to adjust and adapt. It helps if you already have experience with fermentation.

A nice variety of recipes
We got it specifically for the Sriracha recipe and it's been a success! Dozens more we need to do!

How to store?
One of the major instructions I was looking for is how to make hot sauces shelf stable ( without refrigeration) until opened. This book has ALL the recipes going into the refrigerator after bottling.

Great recipes, easy to follow. You can not buy better or equal to home made fermented sauce.

it is difficult to find fresh peppers in UK for most of the recipes
This book had really nice sounding recipes, but finding the ingredients in the uk is a non starter for most of them.suggestions:- provide substitute chilli options for each recipe- provide option for using dried chillis which are much easier to get hold of

Must have for anyone into making their own hotsauce.
I have to admit, when I first received this I was disappointed at the lack of pictures and paper quality. I decided anyways to give some of the recipes a go and made several of the hot sauces in here. Two of the recipes in this book, are so good that they have become staples in my kitchen and several bottles through begging have also made it into friends kitchens.

US measurements! Beware!
I liked the sound of this book and when it came I couldn’t wait to get started, until I realised the units were all cups! Yes, I could convert, but no, it’s not what I want! I’m sending my copy back but I’m sure if you could be bothered to convert the units, it would be a nice book!
