Do the connectors have a check valve so it can be used with only one hose connected?

Yes. I use 1 item every once in a while off of my splitter with no problems.

How does the valve work? I want to hookup 2 devices but at times we may only run one of those two. Is this possible?

Yes you can run one at a time. just light the one you want . I used mine just last week hooked to a camp grill and 2 burner stove

Do the female ends have threads on the inside as well for older connection?

Yes the output ends do have threads inside for the older connections. The input side has only the newer style.
