Original poster, it appears that you're alluding to the recent research on nickel and chromium leaching out of stainless steel pots/pans, which poses problems for: (1) folks prone to contact dermatitis and related skin issues and (2) folks with personal or family histories of prostate cancer. With that in mind, please know that according to both Cuisinart and a few blogs on this issue, Cuisinart's MCP line is apparently now constructed without the stainless steel additive that promotes nickel and chromium leaching. Consumers interested in this issue should of course do their own research in order to be up to date, but this is what I've learned as of 07/31/20 and I’m happy to share it. As an aside to fellow Amazon customers inclined to get snarky in response to cookware toxicity questions, as so many customers did here: If you're not prone to contact dermatitis or if you've never watched a relative struggle with prostate cancer or survived it yourself, then the recently published medical studies linking leached nickel and chromium to these conditions can seem risible. But for people who don't consider avoiding itchy, weeping skin sores or life-threatening cancers chuckle-worthy, the original poster's question is reasonable, much-appreciated, and as relevant today as it was when s/he first posted it back in 2015. Is the base of the 8 inch open skillet heavy enough to keep the pan from tipping over when it is empty?

Yes, this is a very sturdy pan!

Is this pan absolutely flat on the bottom? Or does it have a slight "dome" on the inside and corresponding concavity on the outside bottom?.

The fry pan has a dome of 1.5-2CM in the pan and a concavity of about 1-1.5CM on the bottom of the pan. Very gradual curve on each surface increasing at the outer rim. When hot the pan does not seem to have a pooling problem.
