Versatile, ergonomic and lightweight! Great pan!
I like cast iron. My go to pans are cast iron but I was looking for something that was lighter weight and would be good for camping (i.e. easy to pack, lightweight). I wanted something made in the USA so I bought the lodge carbon steel pan - it arrived and we all agreed that it was as heavy as our 8” cast iron and the handle was awkward and would need a handle cover to avoid heat. So, I returned the Lodge and chose this 7.9” pan. It’s not made in the USA, but it has performed exceptionally well and we are super happy with this purchase. The light anti rust coating was easily removed with soap, water and a light scrubbing. You can easily remove the handle with an allen wrench (not included) which is handy if you want to season it on the grill. The handle feels good in your hand and never gets hot. After the initial seasoning on the grill we started using it as a daily pan. It seasoned easily and has become a favorite for eggs. It’s also appreciated over its lighter weight than cast iron. As for camping this has been great, you can remove the handle and store it easily and it’s not as heavy as cast iron. You can remove the handle or wrap it in foil if you use it over the fire (a possible drawback) another possible drawback is keeping track of the the allen wrench (not included)- I will be replacing mine with a long wingnut. It was even small/light enough to take bike camping. Overall, a quality pan, perfect thickness and seasons easily. I may go ahead and get the 10” too.

Wish it was more coated
Love the size and the height! However, it gets rust super fast, if not oiled after washing. My other pan has some blue coating and almost never rusts. This one I left in water to soak and forgot for 3 or 4 hours (had to run errand) and came back to rust all over surface.....Carbon steel are sensitive but this was too much for me:( And yes, I do cook on high heat and I did season it twice as the instructions say.

Defective after proper seasoning and only 4 uses
It looked great on the cooking video channels I watched, but what a disappointment in real life. I property seasoned it and only used it 4 times to cook chicken breasts and a steak using only some avocado oil. I cleaned all 4 times with mild soap and a washcloth so there would be no abrasive force on the pan. You can see in the picture after only 4 uses. I hope the company will replace it as this is unlike anything I have even seen in over 20 years of cooking. I am hoping this is just a defective pan as I also ordered the wok but have not seasoned it yet to see if the same problem occurs.

Excellent multi-use skillet
TL;DR - with proper use and care, this is a worthy investment for the kitchen. At the time of purchase, there were literally no reviews on this product, so I thought for $30, I'd gamble with some new cookware and provide some feedback for potential buyers. As I write this, I have been using this 7.9" fry pan practically non-stop for two days. This is my first ever experience using carbon steel cookware. On arrival it was sealed in a plastic bag and coated with a very light layer of protective oil to keep it from rusting in transit. Washing this off was quick and simple. I gave it one round of seasoning with canola oil as per the instructions which were included, then fried an egg in butter as the first test. The egg stuck at first but as it cooked it loosened right up and slid across the pan like a leather sole shoe on black ice. Cleanup was simply wiping it down with a paper towel, nothing was stuck or burnt. Pan fried potatoes have also been an excellent success with a little clarified butter, but this is where I had some trouble on day one. Turns out the blend of spices I normally cook with strips the seasoning right off the pan, causing bits of potato and spices to burn and stick. I suspect it's the lemon pepper, and it took almost five pounds of potatoes before I tried omitting the spices with excellent results. I found that they retain more flavor when added once the food is cooked and dumped on a plate. I'm not much of a cook though, so I wouldn't know if it was bad to cook the spices or not anyway. After a three round seasoning session I was able to fry three eggs and four rounds of potatoes (sans spices) with absolutely nothing sticking when using clarified butter for cooking, making sure to preheat the pan before adding the food. Between uses I allowed the pan to cool to where it was just warm to the touch and wiped it clean with a paper towel which leaves a layer of oil behind for protection, no need to wash or scrub. I specifically chose this make and model for the size, weight and the removable wooden handle, making it an ideal addition to the haversack for camping. I will update this review once I have more experience, especially after testing over a campfire, but I am really liking it so far.

Quickly becoming my favorite pan
Well made and works as expected. Was looking for a good carbon steel pan, and found a better than good pan. You'll have to make some adjustments to your cooking to account for it's ability to quickly heat up. Didn't take long for that. Once I adjusted, this has become my go to pan for most of my day to day cooking (acidic foods the exception). Would highly recommend this pan if you're looking for a CSP. Appreciate that they even give you a second handle, although I don't see me needing it for anytime in the near future.

Brilliant frying pan with steep sides to it and natural non-stick capabilities. Not too heavy! Totally non-stick. Cooked a paneer curry in it and then cooked 24 small 6 inch across home made flatbreads in it. It didn’t stick at all and is easy to wash. I just wipe over a bit of oil and hang it on my ceiling airer and al it takes is a quick wipe with a cloth and then it is ready to go again. Oil not even needed for my flatbreads. Best frying pan I ever had! I was delighted! It comes with a spare wooden handle too! Awesome! Doesn’t scratch. Heats up pretty quickly and evenly. Well worth the money.

Bisogna averne cura come da istruzioni e secondo me è un'ottima padella destinata a durare una vita e più!

I'm sick of the scratches on non-sticky pans and have decided to shift to sth more natural. I have cast iron pans - but they are slower to heat up and heavy for everyday use. This 8" steel pan with thin side suits my need in every angle - natural, light, easy to clean up. After rounds of use, I have successfully trained it into a non-sticky steel iron pan. Tricks below - you are welcome! 1. Steel iron pan is much faster to heat up as well as to cool down than non-sticky pans. Adjust your timer and dimmer to make sure things are not over cooked. 2. Before use, I seasoned the pan twice. After every use, I only use warm water to clean it up. NO SOAP. Any remaining oil will over the time will form a layer of protection over the pan towards its non-sticky path. After cleaning, I would always use low heat to dry the pan thoroughly. 3. For the first couple of uses, put a bit more oil. You may down size the amount of oil after the pan becomes non-sticky. 4. Always warm up the pan first, and then warm up the oil, and put in the food at last after the entire pan is well heated. Otherwise, the food will quickly cool down the pan and makes everything sticky and messy. 5. After everything are heated in order, reduce the heat to maintain less smoke and a healthier cooking process. This pan is super for fry - the eggs are so amazing!!
