Q: Do they help keep cats from opening cabinets?

While I do not personally have a cat, my son does. I would not expect a cat would work to get this door open. I believe this latch provides sufficient positive clamping that will render the door cat proof.

Q: Does this come with the screws for mounting?

Yes, it comes with 4 screws. I saw on the description that it doesn't say, but when I bought it, I ordered 2 in case I needed an extra, and the package I still have, unopened, has 4 screws in it, along with the other 2 pieces. Hope this helps!

Q: what are the dimensions of the mounting portions of each catch part?

Roller portion is 1 1/4 lg by 9/16 wide with 1/8 slots , 15/16 on centercatch portion is 1 1/4 lg by 3/8 wide with 1/8 holes 15/16 on center

Q: Is this strong enough to hold RV drawers from flying open when driving down the road?

I would not trust them. I installed this on my flip-up computer desk front and I have to keep a chair up against it, otherwise it pops open.
