High quality Kombu from Japan is best. Little packs of powder can work in a pinch, but for the real deal you need to use high-quality Kombu from Japan. I don't trust the quality of products from China.

THIS PRODUCT IS VERY THICK AND CHEWY! BUT IT IS SUPPOSED TO BE! IN YEARS PAST, I SPENT TIME IN THE PACIFIC OCEAN, AND AMONG OTHER THINGS, I SWam IN A FEW DIFFERENT... "KELP FORESTS" WHILE SPEAR FISHING, SO I KNOW HOW MUCH BIGGER THEY CAN BE WHEN GROWING IN THE OCEAN. SO FOR ME AT LEAST, THIS IS SOMETHING THAT I ADD WHEN MAKING A FEW DIFFERENT SOUPS, etc. ALSO, SINCE I READ ALL OF THE 1 STAR REVIEWS ON SEVERAL MORE SIMILAR PRODUCTS, THE FIRST THING THAT I DID UPON GETTING THIS WAS OPEN IT UP AND TASTE IT TO MAKE SURE IT WAS GOOD. AND AT LEAST FOR ME, I FOUND THAT MINE WAS QUITE SATISFACTORY... I THEN TOOK THE OPEN BAG AND PUT IT IN THE FREEZER IN A ZIP-LOCK BAG SO THAT I DO NOT HAVE TO WORRY ABOUT IT GOING BAD IF I DO NOT USE IT ALL BEFORE IT MIGHT OTHERWISE BECOME NOT SO GOOD.

Plentiful
I did not realize how much kombu I’d get, but wow was it a surprise how much I did get. A lot! They’re great for making dashi and miso soup, and any ocean flavored food stuff.

It seems to be fresh. Not a lot of stems if any. The label is all written in Japanese the google translate cleared that up Put in glass gars better for storage.
