Q: Can anyone answer how long the probe is on this thermometer? I need a 3 to 4 inch probe with a 2.5 inch diameter.

The probe on this Bayou Classic Grill Thermometer is 2 1/4 inches long. The thermometer is 2 1/2 inches in diameter.

Q: any problems with water build up or condensation?

I live in a dry climate, no problems

Q: Will this work on a large big green egg ?

I drilled a whole through a steel door for my pizza oven. then bolted it on, and it works great

Q: Is this made to rest directly on the grate, inside the grill? Thanks.

No! It should be bolted on through the top so the sensor rod is sensing the air temp at the inside top of the grill. If put on the grate, it would simply measure the flame heat, which is much, much hotter. Think of it as an oven temperature gauge.
