Perfect paella pan
I was undertaking my first paella recipe and initially I thought about using a carbon steel frying pan but serving a big party I thought I better move up to a 15-inch pan. That turned out to be a wise choice as I filled this pan to the brim. The paella pan itself is wonderful to work with. It was perfectly seasoned and the heat was very well distributed even though the pan extended well beyond the gas burner it sat on. Best of all, it formed the perfect paella rice crust on the bottom, a dark brown crust with just a touch of carbon. Cleaned up with little effort. If you're going to take on paella, then you want to use the right tools. This pan fits the bill perfectly.

Fantastic pan
Bought it two years ago, seasoned it according to directions and hung it on the wall. Kept chosing other pans thinking everything would stick and be a mess. Pulled it out today for Beef Stew and threw some bacon in. It slid around and cook like magic. Then seared beef chunks and the same thing happened.No sticking whatsoever! I love this pan and wish they made a 15 inch skillet so I could purchase it. It's a fantastic pan! Highly recommend!

Excellent for flat breads, and for larger crepes
This is the best carbon steel pan I own. Unlike some other brands it is easy to start using almost immediately when you receive it. There's no coat of bee's wax laboriously remove. Just wash it according to the simple directions and it's ready to use. It's great for flat breads including tortillas. The 10" diameter makes it a bit large for crepes that are intended to be rolled closed, but is fine for crepes to be folded closed. I do make rolled crepes with it, though. It does require dishes that are 10" in diameter. I use it mostly on an induction burner and sometimes on an electric coil stove. It's a very good tool that's very well made. If I were in the market for other carbon steel pans I would consider this brand first.

So far so good...
I just received this pan 4-27-21 - unboxing was a nonevent as it was shipped simply in a plastic bag and a 3-way cardboard diaper around it. The cardboard had merchandising comments on the front and on the back side once removed, had very simple and specific instructions about the care and use. I followed these to include first washing with soap and water to remove the wax - easy. Took 5 minutes to clean and dry. Then put it on the burner, added a clump of butter and had a scrambled egg within 10 minutes of opening the Amazon box. The surface is like glass in its smoothness and a simple wipe with a paper towel and scrub with sponge to clean it and was ready to be stored. A few drops of oil and another wipe with a paper towel to prep it for storage. So far, I really like this pan. I have been using cast iron for years and found this to be a great alternative. It heats faster and responds to temp change a lot faster. Will be updating this review and buying more black steel from this company. Gave 4 stars for versatility as it is somewhat limited to being a crepe pan, but eggs came off perfectly.

A marvel from ancient times…renewed. Great for searing foods at high temps, no teflon!
I bought this to sear foods at high heat without using a pan coated with teflon. This pan works great for that. It really does become non-stick with use and proper cleaning. It heats up lightening fast, and cools down fast too. The cooking area is about 10” diameter, and the low profile (low edge height) make it ideal for searing foods such as steaks, or for making crepes. What I have found works is to use a chainmail after each use, followed by a little oil, then wipe down with paper towels. I rarely use water to clean the pan; only once since its initial warm soapy water light scrub to remove the protective coating (per instructions on the label). As for heat distribution, it is as uniform as your stove heating element can be, i.e., it reflects the heat distribution of your stove. In this respect, it is unlike most pans with have an aluminum heating core at the base to retain heat and keep it distributed at the base. It is why this pan responds so quickly to heat, and cools quickly upon removing it from the heat source. Here is the chainmail I bought. It has held up so far (almost a year). The middle burned off and now everything sticks.
I loved it at first, but after using it a few times the middle nonstick burned off and now it's a nightmare. I don't use high heat on it and it's slightly warped too. I would return but it's too late.

wish it wasn't pre seasoned. it would have saved a lot of time
I have an 11inch bk pan that I love, so I just bought this 15" paella pan. It arrived and I did not realize it was pre seasoned. The wax coating refused to come off, I had to scrub with hot water soap and brillo and it still didn't remove the wax coating completely. The pre seasoned coating was poor quality and flaking after cleaning the wax out. So I took the time to completely remove the coating, 1/3cup vinegar and fill 3/4 with water boil for about 20 minutes completely removed everything to bare metal, I then began my seasoning procedure for cast iron and it now has a beautiful layer of seasoning and is quite non stick, it heats beautifully, and sits flat on my stove. It is lovely to use, just be prepared to do some serious elbow grease at the beginning.

I bought this pan for my husband as a Christmas gift. He has always wanted to make a big Paella. It’s his new favorite pan in the kitchen. It’s seasoned up nicely as well. It’s huge and perfect for cooking everything!

1. This pan is truly good. I had my doubts if I will be able to use it but it's really simple and very good. 2. It's heavy. Which sometikes is an indicator of good quality and in this case it's definitely good quality. 3. There is no teflon or non stick coating. Which is already a big plus on my books. 4. There's very little you have to do to maintain it. 5. All I do is adter every use, I hold it under warm water, quick rinse, if there are any small food particles stuck (which doesn't happen a lot) I take the soft side of a sponge and with a little soap I gentily go over the pan while still under the warm water. 6. I quickly dry it off and apply a light layer of oil. 7. This is more than enough for all your pancakes and crepes to come out flawlessly. 8. I wouldn't keep it in the dishwasher. Overall a fine product. I would definitely recommend it.

Compré dls sartenes de la misma marca, la crepera y un sartén para freír. La crepera la usé una vez, no se le pegó nada pero mi mezcla para crepas no estaba bien hecha y las crepas me quedaron muy feas, pero efectivamente, nada se le pegó. Con este materia (acero al Carbon) hay que ser muy cuidadosos, no tallar en exceso, siempre engrasar y no dejar humedad. Con el otro sartén fue lo que aprendí, le eché a perder el recubrimiento y ahora todo se le pega, no he logrado hacerle el curado bien, siento que ya no va a quedar como antes.
