Unique lemon flavor
In my cooking and baking, I use lemon many ways: fresh juice, zest, lemon oil, salt preserved lemons, candied peel and this bakery emulsion. Each has such a different flavor that I sometimes layer them. This bakery emulsion has such special and wonderful flavor that I have created recipes just to highlight it and always have something on hand made from it to satisfy the craving it has created: pizzelles, biscotti, lemon sage biscuits, coconut drop cookies, ice cream ... I put it in cornbread.The flavor holds and does not change during baking, does not lessen, and because there is no alcohol as with other flavoring, it does not cause any unwanted reactions in batter.Only two drawbacks, the price and the bottle. Pouring from the bottle always creates dribbles down the side of the bottle, a waste of the expensive flavoring and the bottle has to be cleaned before storing it away. I have a drawer just with Lorann flavoring and have built in some racks to keep the bottles tilted so that they don't leak. No matter how tight I twist the top, they tend to leak unless tilted.I didn't think I would use lemon flavoring but decided to experiment and now I cannot do without it. Most bakery emulsions from Lorann are superb, but I have found the oils to have strange chemical tastes.

Appealing, Natural Flavor
Used it within a couple of days of getting it, to make cherry chocolate chip ice cream. It lends the perfect natural cherry flavor! It took some fine-tuning to find the right amount. I started small, then added 2 drops more at a time (took several tries) to get the flavor intensity where I wanted it. But in the end, the flavor is delicious, not at all overdone or artificial. I added a tiny, little zip of almond extract, which set off the natural cherry flavor superbly. This is the chef’s kiss!

In a major effort to lose weight, I am using peanut powder (flour) as one of my protein sources. It has a lot of protein and needed vitamins. I mix it with a largish serving of Greek yogurt. Unfortunately one scoop of the peanut powder does not add enough peanut flavor to the yogurt, which I use to dip apple slices into. I ordered this to see if I could up the taste without upping the calories. For 1 Cup of Greek yogurt I ended up adding 1/4 teaspoon. It made a huge difference in the taste. It even smells like peanuts. I did put it in a clean glass dropper bottle for ease of measuring and less spilling. No weird taste, just peanutty. I have order more in larger sizes. This was the first time I had order a LorAnn product, but I will try more of them hoping that this is an indication of their overall quality.

Great peppermint taste
I made a small batch of vanilla ice cream with two drops of the peppermint emulsion added. The ice cream tasted just like I was licking on a peppermint candy cane (the candy canes of years ago that is). I can't wait to make a chocolate cake with this tasty emulsion added to the batter.

Not enough peppermint flavor for my liking.
I wish this had more of a peppermint flavor.The bottle size and price were decent.If you do not want an overpowering mint, then this is good for that purpose.Easy to add to recipes, clear in color so it doesn't change the color consistency.The oil is not really thick, it is more like the consistency of coconut oil .
