Are they fine enough to go with work shoes or are they thick?

Too fine for work shoes Owen. If your shoes are not comfy worn without socks, they won't be with these socks. Also, I question the selection of these socks because 1 of the 3 pairs were a different fit and did not have writing in them like the other 2 pairs. I wonder if they were new.

do these socks stay up when wearing ankle boots?

I do not wear ankle boots only wellies. I think they probably do but I have a foot problem and my sock always slide down on my right foot. The left one is ok so I presume that they would be ok in ankle boots.

No there not knee length but best socks I've ever had . I think there are some knee length.
