Quality product
This is a really good stabilizer for gelato with a good final texture. You don't need to use much to get a good consistency. I use about 3 g per 2 liters of ice cream in my recipes (then adjust, as necessary, depending on the fat content).

A small amount makes a big difference!
We've used the Perfect Gelato for an ice cream experiment, with kefir lime flavor... We boiled chopped fresh leaves in the milk. It turned to a very unusual, extra good flavor, and the smoothness was great. We were surprised the mix was so thick, with the small recommended dose of the Perfect Gelato powder needed.

Not enough locust bean Gum too much Guar.
The problem with this product is you have to turn your gelato into stretchy gum trying to add enough so that the tiny amount of locusts bean gum can cover the ice crystals.
