Paella rice is hard to come by in the US, but do not let it stops you from getting it.When I took a paella cooking class a few years ago, they had us to use Arborio rice.It is more accessible and cheaper, but it isn't the same at all.If we used this rice, I would have been making this on a weekly basis instead of putting off getting a pan n rice for years.When I look the rice, they remind me of tiny pearls - each has a white tip on it. Every single one was in perfect shape. It's definitely a high quality product.My paella came of the oven today, the liquid was completely absorbed, I still saw the tiny white tip on them.They look slightly wet. When taking a bite into it , it was really amazing. Not only it picked up all the flavors, but I also could taste perfect amount of moisture while it is light and fluffy! I ate a lot of it, and it doesn't give me the 'hangover' feeling from regular ice where I felt super bloated, heavy and sleepy. I really had to stop myself from eating too much though after more than 1/3 of the pan was gone.I thought the bag was small, but it turns out each bag I can make 3 pans of paella (12 inch paella pan).Now I am really happy and will definitely making a lot paellas. It's just too good to pass up!

Worked very well and absorbed stock quickly
I wanted authentic paella rice, along with other Spanish ingredients. I have tried arborio rice in paella. It "works" but I did not care much for the results. Real Spanish paella rice is much shorter and it absorbs the stock quickly. The ratio of stock to paella rice is 4 parts stock to 1 part paella rice. It cooks quickly! Best to not pour in all stock at one time, hold back a cup or so and add as the rice "grows" and liquid is absorbing quickly. Don't walk away while you're cooking paella; only bad things can happen. Spanish chorizo and real BOTH sweet and hot paprikas made the paella fabulous! Be careful when buying saffron! I got hold of a fake tiin of it. it's estimated that 90% of saffron sold is fake. Check online for what to look for in real saffron.

Very authentic
Is just rice. But I realized a,long time ago that if you want to cook a recipe from a certain region, try to have the food that they use. This rice helped me achieve that. Cooking an authentic paella with the right ingredients.
