You have to boil it longer
I tried this pasta initially by boiling half the box. I boiled it for the exact time on the box. The pasta was so hard and had a strong chickpea flavor. I was very disappointed but a few days later I tried boiling it longer, for 20 minutes, if not a few minutes more, yes that long. The pasta was still aldente but it tasted like regular pasta and I added the whole foods marina sauce and drizzled some olive oil and added fresh basil. I couldn’t stop eating it, now that it’s all gone I’m back here adding several more to my cart. I’m happy knowing I’m eating a healthier alternative to regular pasta and that I was able to make it work.

Okay! Pasta snob! Never thought I’d see the day when I gave up my nice Italian wheat pasta, but I did for my health and I know I should have done it sooner. Many gf pastas out there do not measure up. A measly 8 oz for a price that could easily be 3x a POUND of wheat pasta.. this value is not fantastic but good when compared with other brands.. what is the difference? The texture. It holds. Firmer than some rice based pastas but that’s good. It won’t crumble or turn to mush! You can mix and match and bake and stew and it’s not gonna fall to little pieces of unrecognizable something in your food! It holds well even with some sautéing and tossing around, like with my favorite, broccoli rabe. Flavor is good. It’s not as sweet as rice or other grain based pastas. 100% chickpea flour (organic). Just when I thought I knew everything about my favorite bean, who knew all by itself it was the best ingredient for gf pasta?!

Not my fave but they do the job
I am on a strict gluten free diet, and I have to watch many other ingredients as well. The texture and taste of these is a little off putting in comparison to the Banza brand, but it is tolerable when you need pasta shells. I do like the price, and the ingredients. They cook fairly fast and fit my health requirements, so while they’re not my favorite I will purchase again!

Even if you normally eat legumes this pasta will give you gas! The processing needs work.
I was surprised how disappointing this product turned out to be. In the years that they've become available I've tried many different legume-based pastas, including others made with 100% chickpeas that may be only fleetingly available at a discount grocer, and this was, hands down, the worst I've tried; felt like I wasted the batch of Marcella Hazan's tomato sauce I made for it, partly because I composted the last of the leftovers. While cooking, I tested it a couple times, hoping to achieve al dente texture, but this one needs to be fully boiled to be edible. At that stage, the flavor was only passable. But the worst part was that it gave me incredible intestinal gas! That happen the first time I ate it and again when I consumed leftovers. And I write that as one who has been quite consciously incorporating legumes into my diet on a *daily* basis for over a decade now, so I think my microbiome is pre-adapted to them by now. Again, I know for certain I have enjoyed other 100% chickpea pasta in the past and not had that gas problem, so I conclude this product may have bypassed some step in the process (soaking the chickpeas first?).
