It's similar to powdered custard. Empty the packet into a small bowl, blend with some granulated sugar, I use about two and a half tablespoons (15ml spoons). From a pint of milk, add three tablespoons to the bowl and mix thoroughly, get all the lumps out, and you will have a thickish paste. Heat the rest of the milk in a saucepan until it's fairly warm but not boiling. Take pan off the heat and pour some of the hot milk into the bowl. Mix thoroughly and pour back into the pan. Heat the pan again on a lowish heat until contents are just simmering and simmer for about 2 minutes (you are cooking what was in the bowl, the packets of blancmange are mostly cornflour). As soon as you put the pan back on the heat, STIR CONTINUOUSLY, making sure that the spoon is on the bottom of the pan. Otherwise, the mixture will burn on the bottom. After the 2 minutes, pour contents of the pan into a clean 1 pint (500mls) bowl. Have a dessertspoon of sugar ready to sprinkle over the top straight away to stop a skin forming. Once the contents of the bowl have cooled slightly, put in the fridge for a couple of hours.
