Unless someone has a light meter that can read Kelvin, I highly doubt you'll be able to get a number. The light is VERY yellow. Its way below 2700 K, of that I'm positive

Is there an option to turn on/off manually without unplugging?

My pleasure to serve you my dear customer~ This is a dusk to dawn night light, it will automatically turn on when the surrounding environment is bright enough and turn off when it's dark. You can control the brightness cause this light is equipped with a stepless dimming. So, there isn't manually turn on/off option there. If you don't need to use it , you can just pull it out. I want to use this light in my bathroom, and the self dimming sounds cool but my bathroom has no windows so will it just be on all the time?

It’s self dimming and there is a manual dimmer too. Just set the manual dimmer to low. It’s LED so it’s not going to waste a lot of energy. If the room next to your bathroom casts enough ambient light into the bathroom the night light might actually not turn itself on. Regardless, they are great lights!!!
