With a diabetic with a sweet tooth in the house, baking, etc can be an issue. Allulose acts basically like sugar and works well in baking, ice cream and lemon curd making. It also caramelizes (albeit faster than sugar so needs to be watched) so I can make lovely gastriques for those special meals.

Bulk package was the best price per pound, and Hoosier Hill has the best price on Allulose in general. This is a great Keto sweetener and caramelizes like cane sugar. I use it in sauces, like cranberry sauce (my family couldn't tell it apart from the cane sugar version) and caramel sauce (my bunco ladies also had no idea it wasn't real sugar). I have used it in baking, but it tends to brown the product too quickly. It you use it in baking, I would avoid this sweetener if it has a long baking time.

This bulk purchase saves a lot on using allulose in desserts, coffee, etc. It's about 70% as sweet as sucrose, and about 60% as sweet as fructose sugars. But unless you ingest too much (~25 grams/day) there is no gastric problems and it doesn't do anything to increase my blood sugar. The best thing about this, IMO, is it browns beautifully, so your cakes, pies, etc will brown, and you can make great caramel sauce too (I add some monkfruit to boost sweetness). Other sugars lack the Maillard Browning Reactions, crucial to getting the caramelly finish, and allulose is great to use for making keto barbeque sauces. I hope prices keep coming down, and people use it more frequently.

The price is good, but there are a lot of clumps that have to be broken up.

It’s my go to alternative sweetener. Caramelizes like sugar but at a lower temp. Works great in my chocolate making too.

This allulose comes in a large, heavy plastic bag, zip tied shut. There have been some clumps in the boxes I've ordered but they're easy to run through a sieve as you put it in its airtight storage.Its flavorless and great in so many recipes.The price break is fantastic.We've ordered it multiple times and plan to again soon.

I love this for cooking and especially for scoopable ice cream! Great value buying bulk like this. Do wish it was packed in 5 lb packages for easier handling and storage in my efficiency apt.
