I weighed a level cup of dry lentils and got 7.05 oz. That would be approximately 11.35 cups for the whole 5 lb bag.

Is the mill gluten free therefore gluten free lentils?

Lentils are naturally gluten free, however wheat is grown and processed there.

What is the best way to store them and how long will they keep?

I store in mason jars with air packs. Enough air packs will seal the lid. How long? Not sure. I only have some that are a year old.
