Best knife my hands have held
I bought this knife as a Christmas present for my son. I figured this would be the only chef's knife he would ever need to own. It is extremely sharp, has good balance and a round handle that fits in hand better in my opinion. Excellent product. I plan to buy myself one in the near future.

Great shape but..
I purchased the knife from the specifications listed and the photo given. It appeared to be a moderately priced VG-10. The fit and finish were not of high refinement. The handle was not aligned at the rivets and at the bolster. The handle was not polished or finished well.As a personal preference note, the knife did not have the balance that I was looking for as it was not like the Shun classic or the Myabi line of knives that are both excellent for "feel" and for the finish. I prefer a lighter weight knife with close to a 50:50 balance the bolster. I have larger hands and perfer a tall blade from the spine to edge with a thin D handle to keep my fingers off of the cutting board surface when drawing the knife.

Logo Chips Off In To Food
Received this as a Christmas Present. I have used this knife maybe 10 times and hand washed it. Great knife until, chopping onions and little black specks started appearing in the bowl. Couldn't figure out where they were coming from. Until I saw that the lovely writing the knife came with was falling into my food. NO! Contacted Sointu, and Jack replied that it was okay because it was food grade and supposed to do that. Really? Why not just use adhesive so I can avoid your food grade poison by peeling it off? Instead, I had to scrape it off with my fingernail. Now I am stuck waiting for the rest to wear off into my food. Unacceptable! You could expect this on a cheap knife, but not a knife that costs this much money. So mad!My husband saw these knives on Amazon but bought them directly from Sointu sight after seeing them here. He spent over $400 on a nice set of knives and this is so disappointing.

Seriously, IF you find another knife that is sharper, BUY IT! This knife is the real deal. I cannot stress this enough... I could perform surgery with this thing. You needn't look further, this is the one you want.
