SImply no reason to get any other knife of this class.
I bought this knife ~4 years ago for a prep cook kitchen job. I process about 200-300 lbs of chicken a week, by hand or in this case knife. Sometimes just cleaning up double lobe breasts, some cutting into boneless bites, and some cut into fine strips for chicken cheese-steaks. Not to mention the tons of onions and other various prep tasks. 40-50 hours a week every week, without fail. With only using a honing steel to keep the edge in good shape, the edge has JUST started to fail this year, and needs to be professionally resharpened. Even using those crappy "knife sharpeners" you see in a lot of kitchens, has helped it limp along even though the edge is almost entirely gone. This knife is a workhorse. Kept sharp this beauty will cut protein, and pretty much anything else, with ease. To quote Hattori Hanzo from the movie Kill Bill: "Should you encounter God on your travels, God will be cut" Signed, A frontline prep cook who has put multiple tons of work through this blade.

Overall a great and light chef knife
I love that the dimples ("granton edge") make vegetables not stick to this as much as a traditionally shaped chef knife and that it is sturdy but very light. This is very quickly become my go-to for dinner prep.

Great knife. Buy a sheath please.
Great knife, very sharp. Please buy a sheath for this knife, I found out the hard way how sharp this knife is trying to put it away. Mercer also sells sheaths. It should have came with the knife.

Sharp Chef’s Knife for a Good Price
It is the business of a Chef’s knife to be sharp. Be careful how you test this one. I touched the tip. Do not do that. This knife is shockingly sharp from tip to handle. My finger is healing nicely, thank you very much. I have not had a truly sharp knife in years, and I have learned to adjust. I now have the ability to cut tomato slices much thinner than could have any earthly use. I have heard it said that dull knives encourage accidents. I will say, I have learned to respect my knife set after buying one truly sharp knife. I bought a sharpener in honor of this sharp knife, and have discovered how dull things have been. This is a good knife at a good price. I respect this knife.

Well Balanced with good weight
Been using this knife for a year now and love it. I cut/chop a lot of vegetables with it and it does a fantastic job. As some other reviews have mentioned, I wish it came with a sheath since it is incredibly sharp but you just need to be careful with it. I just ordered the Mercer 6" variation for smaller jobs, and while this brand is kind of pricey the quality and functionality are worth it if you spend a lot of time in the kitchen.

So far so good. Don't see the point of the "dimples". Haven't seen that they make any difference. For the price and quality, I'm very happy.

now I see the difference a good Knife
The Mercer Culinary Genesis 8-Inch Chef Knife is incredible. it feels great in your hand and can it cut. its very sharp so be very careful. I can cut onion now with no tears. it so sharp it just slices the onion with my old knife I would put on glasses to chop the onion but that did not help I would even cut it under running water none of that is needed with this knife.

This hollow ground chef’s knife is a great addition to my kitchen. It’s balanced very sharp, reasonably priced, and I know it is used in commercial and professional kitchens.

El peso he sabido que es algo más subjetivo y depende de lo que uno desee cortar y cómo uno se acomode. Al menos para mi ha sido un buen cuchillo para cortar carnes y en ocasiones verduras. Es resistente a perder el filo según mi percepción Debo aclarar que no soy cocinero profesional, lo uso en mi cocina para preparar mis alimentos 3-4 veces a la semana.
