Could I use this to cut a pumpkin pie?

Maybe pumpkin bars, it does not work well with anything sticky. I have made snickerdoodles and many other cookies but I usually roll them in sugar before pressing. It works well cutting shapes from cake or bars that are baked.

How do I remove the pattern and change to another pattern?

It comes with multiple disc. One side stays the same. The other side allows you to pop in different patterns.

Are the molds dishwasher safe ?

I am not sure but it is really easy to clean.
