Can we put the box in refregirator for three weeks before starting using it? We received it as a gift today, but will be out of town

I wouldn't put pink oyster spawn/substrate in the fridge. Other oyster mushrooms would be okay, but I understand the cold might kill pink oyster mycelium. Your best bet is to keep them closed and in a cool, dark place. I suspect they'd be fine. (In my experience, some of these could use more time to colonize anyway.)

What type of lighting is needed for these and how much light do they need?

Mushrooms only need ambient lighting to grow, meaning you can grow these right on your countertop with overhead lighting, no problem!

Why would the block of sawdust turn green? It only produced one small flush of 1.5 oz and then stopped when the whole block got all green and fuzzy.

Mine also produced one small flush then stopped and just produced little malformed bits that never turned into anything. I am new to growing mushrooms (or anything really) and was really looking forward to getting into this, maybe as a hobby. But then if I can't get the "easiest kit" to work... I was very disappointed.

What state are these grown in before shipping?

They are still in the spore stage. In just a few days after watering they start to grow. Bought two for our grown kids for Christmas, they both loved them. They are fun to watch grow and look just like the picture on the box at harvest. Oh and the mushrooms taste great.

Spritz your kit at least twice daily - more if you're in a particularly dry climate. 4) Place your kit in the most humid part of your home and outside of direct sunlight. We suggest putting it on a kitchen counter close to a sink. The mushroom mycelium will sense the oxygen in the air and produce mushroom 'pins' - another word for 'baby mushrooms.' This will usually happen within two weeks of slicing the plastic. 5) Harvest before the caps flatten out and become concave. Mushrooms grow quickly, so when you spot your first pins, keep an eye on them. The warmer the environment the faster they will grow. Mushrooms should be ready to harvest 2-5 days after pin formation.
