Is this device suitable to use for when making jam, marmalades and chutney

As long as you can get the jam on the probe i would think so. I have no jam but just tested on tomato ketchup and it works good.

Is this ph meter suitable for founding out if you still have lye in your soap?

Don't know I'm afraid. I use it solely for the PH in my pond. If you were to dissolve some soap in a cup of water then test you would get an idea providing you knew what the PH of the water was in the first place. But it would not be accurate. And i guess any meter of this standard would be similar in its findings. The meter itself is average to good, but not brilliant. Hope this helps.

No I haven't, but experience tells me it will work OK for dilute solutions of liquid foods.
