Can this be used on euro/us knives without worry?

You can use any knife you wish - it will however sharpen your edge to a 15 degrees each side, rather than the more traditional 20 degrees. You can however, for a similar price purchase the same sharpener with three slots. The first slot for asian knives (15 degrees), 2nd slot for euro / usa knives (20 degrees), and the 3rd slot for honing.We have mostly japanese knives, but the european knives we own ( victorinox )have all been sharpened to 15 degrees, and we are very happy with the results
