Can this box be used as a junction to extend 12V battery cables? Current cables too short to connect through new battery box

It all depends upon how much current your battery cables will be carrying? This is for small amperage circuits for Brake Lights, Tail lights, back up lights. What I have done in the past when the cables were to short is I would bolt the connectors, 1/4" round bolt, if your connectors have a 1/4" lug on the end, the main cable and the extension cables together and wrap them with lots of electrical tape and maybe a 3/4" hose over all of it so it does not rub anywhere and short out to the frame. Many options available ! Your auto parts should have what you need. I just use the 1/4 bolt, washers and nuts to extend cables, much more affordable than getting all kinds of add-ons.

Tried to add nylon nuts. 2 of the 7 posts are now spinning as i tighten the nut. something is stripped. is this something i can fix?

The studs are spinning in the holes that hold them. I would try super glue or JB weld them, or send it back as defective. You can double nut the studs, but I think a nylon nut would require to much to hold the studs in place and will turn, plus they are probably metric, but I am not sure.
