How many pieces does it contain?

Hello Kim. Not all of the responses provided have been correct so I will answer as well. The set includes 237 pieces but not all models can be built at once. Only one of the models can be built at a time and will need to be taken apart in order to build the 2nd or 3rd model. My recommendation is always to determine which model you want to have it built as. Perhaps with this set you like the robot build. In this case I would build the car then the airplane in order to learn the tips and tricks from these builds then build the robot. I hope this helps.

Do you have to break it apart to transform it?

This is not really a transformer. The main build is a "flying robot". Others are "alternative builds". So, yes, you have to break it apart to build into alternative model
