does it produce depth map?

No, this only retrieve the in a single image the images captured by the two lenses. You can produce the depth map using opencv in python or c++

Does this save the video from each camera as seperate Mp4s?

Normally our customers use their own software, save videos depend on the software. At present our testing software, the videos are together, not seperate, becuase this cameras is Synchronised.

can the lenses be somehow swapped out for fisheye lenses?

Hello Customer, The lenses can be replaced by fisheye lenses, but you should use the same size lenses.
