Excellent trimming knife, razor sharp and non slip grip
Used to trim a brisket the other day and it was great for the task! Size is just right to keep good control, razor sharp allowed effortless trimming of hard fat and the grip is textured enough you can feel confident it won't slip with wet/greasy hands. Highly recommend for the price!

The Victorinox Fibrox Pro 6-inch Boning Knife ain't just a kitchen tool, it's a gosh darn miracle worker. Sporting an ergonomic Fibrox Pro handle, this baby offers a grip tighter than a boa constrictor in a wrestling match - even when it's wetter than a water park.But let's get to the meat of the matter, the 6-inch stainless steel blade. It's as flexible as an Olympic gymnast and sharper than a stand-up comedian on a good night. When this knife gets to work, you can almost hear the bones whimpering in fear as it delivers precise, clean cuts like a hot knife through butter.Now, no tool is perfect, and this knife ain't an exception. Some kitchen warriors have found it's not the sharpest tool in the shed when it comes to butterflying pork or skinning fish. And it has the audacity to make you provide your own sharpening tools, doesn't come with a fancy dress (sheath), and throws a tantrum if you try to give it a bath in the dishwasher; Albeit for the price this is fine.But hey, with the same tech used in Swiss Army knives, you can bet your last dollar it's a sturdy piece of equipment that will stick around longer than your mother-in-law after the holidays.

The right tool for a difficult job!
Bought the knife to help prep Eye Round roast for Sous Vide cooking- <Thanks to Guga from Sous Vide Everything> Eye Round roast from BJ's had lots of silver skin and extra fat that needed trimming. The Victorinox knife was sharp as could be and make a difficult task easy. As I learned to use the curved blade things got even quicker and easier. My only complaint is that there was no sheath for the knife. Got rid of an old Copper Chef (don't laugh) blade and put the Victorinox in the wood block. Better results with half the effort- EXCELLENT quality and value!!!

Effortless at a great price
At this price, I couldn't imagine a better knife for breaking down and boning. Incredibly sharp, almost no effort required to cut through anything and separate flesh from bone or separate joints.

Victorinox: Always Excellent
It's a Victorinox so you already know it's going to be very good quality. I hoped it would have a little bit more flex since it's a "semi flexible" model but it's still very functional. There's simply nothing bad to say about this or any Victorinox knife.The handle of the knife has very good grip, even when wet so you don't have to worry about it slipping. It's a fantastic knife at a fantastic price.
