What kind of material is this mat made of?

Cindy: It is a HEAVY DUTY 1/16 or more thick PLASTIC. I also have the FISKAR'S same size mat which is LESS heavy duty and MORE money.I use the Alvin's for GLASS CUTTING: and the FISKAR'S for my photography settings on 2D & 3D art.Hope that helps - BUY the ALVIN!

would it be safe to use it for fondant work? thanks.

I've never used the cutting mat with food but all I can say is to try it. The mat doesn't give off an odor. I'd be concerned with some kind of taste transfer. I'd bet the mat would go through the dishwasher safely. It's not as flexible as the picture may suggest. I think it's a great idea - give it a try!

I don't know. But neither too thick to be inflexible nor too thin to protect the table. Maybe 3mm.

According to the Alvin website, the 296M 14" Professional Parallel Glider is a Metric tool, the 'M'' standing for METRIC. Why is this seller advertising the "296 M ", yet they only want to provide the imperial version "296"? Item Numbers mean things.
