Fine Japanese engineering
It is exceedingly well designed: the curved grip works well, the bowl catch works well, the finger guard effortlessly slots itself into position such that the final strokes run on the base as a track, and then there's the completely understated but excellent decision to bevel the edges at the bottom, so the guard pulls away easily there, after the blade.It is very easy to slice very quickly very soon after first use. I'm reviewing for a home cook perspective, and I think it's a long overdue purchase - on it's maiden voyage I sliced about 1.5kg potatoes for boulangeres, and had finished in a couple of minutes at most. By hand I'd have still been going ten minutes later, and probably cut myself from not having bothered to sharpen the knife for too long.On the point of sharpening, I like that Benriner sell the julienne blade attachments separately as replacements, and the main slicing blade can be removed for sharpening.My only criticism would be that I think the level adjustment could be clearer: if lowering the table (thicker slice) you have to push down slightly as you go, or else back-off the adjustment a lot, push it down, then tighten to creep back up (gradually thinner) to the desired level. With some spring pre-load above the table, that issue would be eliminated. It would also be helpful if there were some indication of thickness other than eyeballing it and running test slices - a marked .5mm scale dial on the side say, transparent with the table as its own indicator.All in all though, very very good.

Worth it (I expect my shop bought coleslaw bill to be shredded as a result)!
I've hummed and hahhed over one of these for a while... even bought a cheaper V-shaped one from TK Maxx and another cheap one from Lidl.Basically - save yourself some money (or, invest the money you would've spent on crap ones and buy this) - top quality and incredibly sharp...(and contrary to some reviewers who haven't read the instructions/watched YT vids)... can easily do julienne strip's (use the separate serrated blades attached with the screws).Every Japanese manufactured thing I have is excellent and makes a refreshing change from the cheap shite!My poor old Magimix has just lost another job (as I can't be bothered changing blades and cleaning it for making regular but small amounts of coleslaw) - I now only have it for making hummus 😁!

Nice and wide for almost any size of vegetable.
This is best for bigger veg, cabbage, potatoes etc. But does a really good job with even the smallest. Easy to use, easy to clean. The only minor downside is a lack of julienne or shredding blades. It could be that these extra blades are not practical with such a wide mandoline.

Brilliant piece of kit
I first bought a benriner classic 25 years ago. It was better than many other makes at delivering the fine cut veg I wanted and was still going strong five years ago when my husband and I opened a coffee shop. We used it many times daily (home made coleslaw!) and when it eventually gave out, had no hesitation in replacing it. We sold our shop a while back and lost it in the process. Have been meaning to buy a replacement since then - have just ordered the newer version and am very happy. It has some useful new features (non-slip grip on the base, hook for resting on bowls etc) that are great - wish I’d had them on my old ones. A good, reliable cutter that will give you fine shards of veg. Beware, it is very sharp and you can seriously injure yourself if you don’t use it carefully. The veg holder is a good idea, but we found it much easier and safer to use a non-cut glove protector. Although you do still need to be careful even then. Can be tricky to clean the channels for the blades, but everything comes apart and for the harder to reach places we used a purpose-bought toothbrush to get in the nooks. All round, I absolutely recommend this.

Might want the larger size as well
Lovely mandolin slicer. If I had any gripes it is my own fault for not considering the larger size (The Benriner BN-95W is around £70, which is just over twice the price of the BN64W) . A medium sized onion only just fits within the width of the blade. Some vegetables you can cut into smaller pieces to fit but that's obviously not an option if you want onion rings. The other gripe is that the maximum thickness appears to be less then the 8mm stated. It does in fact say adjustable from 0.5mm to 0.8mm but this must be centimetres, i.e 0.5cm to 0.8cm. A pound coin would just about slide under when set on maximum thickness. It would help if the cutting blade sat as high as it could inside the frame instead of being pushed down by a millimetre or two by the retaining screws. You can see the gap in the online photos as well as the one I've added. Moaning over. This made very short work of slicing the onion, courgette and softish aubergine shown partly cooked in the first image. I can't see myself using it for julienne but you never know. I should add that it took seconds to wipe clean and overall I very pleased with it.

Great product with removable blades for sharpening.
Bought this because it has removable blades which means I can sharpen the standard blade when it gets blunt - much better than the usual mandolin where the blade is fixed and when it gets blunt you have to throw the whole thing away.Nice selection of blades and a guard to use when slicing - which I would definitely recommend as the blades are extremely sharp. Easy to change blades. It took a bit of time to get used to changing the size of the standard blade but, once you do get used to it, its a doddle.

Brilliant!
Brilliant tool, I wish I had bought this earlier. Simple and easy to use, you can regulate the thickness and things come out uniformly sliced. You have to be careful not to cut yourself so wear a protective glove...the safety holder is not great for small things like radishes but with a glove, you won’t have an issue. I like that this updated version has rubber at the bottom so it doesn’t slip and it also has indentations so you can hold it securely over a bowl. If you want something easy and simple with brilliant results, this is it!

Superscharf...
...wie eine Mandoline sein soll.So einige Geräte und Küchenhelfer sind bei uns im Einsatz und es gibt genug Erfahrungen mit V-Hobel und anderen Mandolinen nahmhafter Herstellter. Der große Benriner Hobel ist seit ein paar Wochen nun in der Küche im Einsatz.Fazit: superscharfe Klinge, vernünftige stabile Justage der Schnittbreite...von 0 bis ca. 10 mm, Anti-Rutschfüße, Einkerbungen zur sicheren Auflage auf einer Schüssel, sehr guter Reste-Halter.....Krauthobeln macht jetzt richtig Freude, und große Zuccini-Längs-Scheiben sind kein Problem mehr....wenn ich so weiter schreibe, klingt das wie ein bezahlter Jubel - Brief....ists aber nicht!Abseits vom Jubel noch zwei Anmerkungen:1. die Klinge ist so fantastisch scharf wie der Preis hoch ist....88 E sind schon eine stolze Summe für den Hobel, der eigentlich nur hobeln kann!2. die Freude am Hobel dauert nur so lang, wie die Klinge scharf ist.Allerdings ist die Klinge leicht ausbaubar und sollte - genau wie jap. Damast-Messer - über Schärfsteinen (nass) abgezogen werden. Das ist zwar etwas aufwendig, aber das Ergebnis ist ein superschafter Hobel der einfach nur Freude macht in der Küche.Ich vergebe volle Punktzahl!

Mais je ne comprends pas le fonctionnement hélas en anglais...il n'est pas le même que les modèles plus petits...les différentes lames n'y sont pas non plus et je me demande si il est possible de les acquérir individuellement...
