can the knife be sharpened and what is it made out of please.

The knife consists of a plastic handle with a long thin metal blade which provides the necessary flexibility to cut the ham. The tip of the blade is squared off (slightly rounded) and fits neatly into the protective sheath/guide. My understanding is that the blade can be sharpened however I have not attempted to do this yet.

Does the knife come with a storage box

Not sure what you mean by storage box but it comes with the white box that appears on the image and that might serve for storage (it is a carton box). Thank you.

Has anyone used this with smoked salmon? Is the blade very flexible when removed from the protector?

The blade is fairly flexible but not whippy. I haven't tried it with smoked salmon but, thinking about it, that's a good idea. I suspect it would work very well.

By storage box I mean something to put the knife in after use, away from children's fingers, preferably made of wood.

It is not a box...but for sure it is something that helps you for cutting your ham and not yourself! and also it is nicely protected by the plastic so it still helps if my daughter is around....
