This has such nostalgic throwback packaging that has not changed since before I was born.I always know what to expect when I buy this as the flavor is consistent.It is easy to throw together when you need some cornbread, it is appropriately moist and dry, it smells like Jiffy cornbread, it mixes into a nice consistency.Are there other maybe “better” corn bread mixes? Maybe, but who care? This is better than an acceptable camera, better than the second day of fresh sheets, and better than a warm up of coffee. Not quite perfect, but sometimes you do not need perfection, this is perfection for what it is at a price you cannot beat.Plus you can make pancakes, waffles, or fried chicken batter with it, which is basically all the food groups.

Jiffy corn muffin mix is the original corncake, cornbread mix that’s been reliably good for decades. I came across a chef of sorts Joe “Sizzle” Johnson who gave me a recipe that the photos are based on and the one hard fast no exceptions ingredient is, genuine Jiffy cornbread muffin mix. Can of jalapeños, half a package of corn, add a thin layer of pizza sauce, then cheese, bake until brown…. Terrific. I love Jiffy corn muffin mix.

Tastes great after 20+ years. I add a little agave and melted butter in the mix. Tastes even better.

It’s a basic corn mix. I add the eggs and milk, of course, and also frozen corn and zero calorie sweetener to amp it up a bit. Turns out wonderfully.
