Black Elderberry should be processed using heat, because the seeds in the berries contain cyanide (as do many seeds), however, the cyanide evaporates off at a very low temperature (78.26° F) . This product is pasteurized at 161°F. Gaia Herbs Black Elderberry Syrup is made using the fresh pressed juice of elderberries, and is not made from seeds, stems, or leaves of the elderberries.
