How does this playstand benefit over the kickstand already provided on the system?

The kickstand supports it against the bottom of the console-where the usb charger would plug in. with this stand, the console sits elevated and the gap in the center would allow you to plug the console in so you could charge the console and play in tabletop mode

Will it be able to charge like the dock?

It elevates the switch so you can charge as you play in table top mode. Where as WITHOUT the stand. The port to charge is too close to the surface of a table.

Is there a case that can hold both this as well as the Switch?

I use the Satisfye grip case. It has a storage pocket on the top that it fits into.

Is there a usb-c elbow adapter out there that will allow you to plug in the cable and point it up so you can hold it and charge it while playing?

You don't need a right angle usb-c adapter as you can use the charger plug from the Nintendo Switch.
